  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/4 tsp salt

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a cupcake pan with liners.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon juice, lemon zest, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Scoop the batter into the cupcake liners, filling each about 2/3 full.
  8. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
