  3. Stir in the peppermint extract until fully incorporated, about 30 seconds.
  4. If desired, divide the mixture and add a few drops of food coloring to create colorful mints.
  5. Roll a portion of the mixture into a long rope about 1/2-inch thick and repeat with remaining dough.
  6. Cut each rope into small pieces, roughly 1/2-inch in length.
  7. Allow the mints to sit at room temperature for 12 hours or overnight to dry.
  8. Once dry, enjoy immediately or store in an airtight container.
