Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line your sheet pan with parchment paper.
  2. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger until well combined.
  3. Add bite-sized chicken pieces to the marinade and let sit for at least 15 minutes.
  4. Arrange marinated chicken on the lined sheet pan, add chopped bell peppers and sliced onion, drizzle remaining marinade, and season with salt and pepper.
  5. Bake for 20 minutes without opening the door.
  6. Remove the pan, stir gently, sprinkle cashews on top, then return to the oven for an additional 10-15 minutes.
  7. Let it rest for 5 minutes, garnish with fresh cilantro, and serve.
