  • 1 teaspoon Chili Powder Spice.
For the Toast
  • 4 slices Bread Sourdough, whole grain, or gluten-free.
For Garnishing
  • 1 bunch Fresh herbs Optional, parsley or cilantro.
  • 0.5 cup Crumbled feta Optional, for creaminess.

Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium heat. Sauté chopped onion and diced bell pepper for 5-7 minutes until softened.
  2. Add diced tomatoes and spices to the skillet. Simmer for 10-15 minutes until thickened.
  3. Create wells in the sauce and crack eggs into them. Cover and poach eggs for 5-8 minutes until whites are set.
  4. Toast the bread until golden brown. Takes about 3-4 minutes.
  5. Assemble by spooning sauce over the toast and topping with poached eggs. Garnish with herbs and feta if desired.
