Ingredients
  

For the Noodles
  • 200 grams Fresh Instant Udon Noodles Substitute with frozen if fresh isn’t available.
For the Sauce
  • 100 grams Vegan Kimchi Use homemade or store-bought.
  • 50 ml Kimchi Juice Source from homemade kimchi.
  • 1 tablespoon Sugar Adjust to taste.
  • 3 tablespoons Soy Sauce Opt for low-sodium if preferred.
  • 1 tablespoon Sesame Oil Replace with olive oil if preferred.
  • 2 cloves Minced Garlic Fresh garlic is best.
  • 1 tablespoon Rice Vinegar Optional.
For the Vegetables
  • 1 medium Onion Yellow or white for best results.
  • 100 grams Vegan Ham (optional) Can be omitted or swapped with tofu.
  • 150 grams Mushrooms King oyster or preferred kind.
  • 2 stalks Green Onions Use as topping.
  • Salt and Pepper To taste.
For Garnish
  • 1 tablespoon Sesame Seeds For topping.

Method
 

Preparation Steps
  1. Cook the fresh instant udon noodles according to package instructions (about 3-5 minutes in boiling water). Drain and rinse in cold water.
  2. In a bowl, whisk together kimchi juice, sugar, soy sauce, sesame oil, and minced garlic. Add rice vinegar if desired.
  3. Heat a non-stick pan and add sesame oil. Sauté diced onion for about 3 minutes until translucent.
  4. Add vegan ham (if using), kimchi, and sliced mushrooms to the pan. Cook for 4-5 minutes until heated through.
  5. Introduce the cooked udon noodles and sauce to the pan. Toss gently for 3-4 minutes on medium heat.
  6. Season with salt and pepper. Cook for an additional minute and serve topped with green onions and sesame seeds.
