Preparation Steps
- Cook the fresh instant udon noodles according to package instructions (about 3-5 minutes in boiling water). Drain and rinse in cold water.
- In a bowl, whisk together kimchi juice, sugar, soy sauce, sesame oil, and minced garlic. Add rice vinegar if desired.
- Heat a non-stick pan and add sesame oil. Sauté diced onion for about 3 minutes until translucent.
- Add vegan ham (if using), kimchi, and sliced mushrooms to the pan. Cook for 4-5 minutes until heated through.
- Introduce the cooked udon noodles and sauce to the pan. Toss gently for 3-4 minutes on medium heat.
- Season with salt and pepper. Cook for an additional minute and serve topped with green onions and sesame seeds.
