Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your workspace.
- In a mixing bowl, combine minced beef and finely chopped onion, seasoning with salt, pepper, and dried mixed herbs. Mix well for about 2-3 minutes.
- Lightly flour your work surface and roll out the shortcrust pastry to a thickness of about 3mm. Cut out circles using a round cutter.
- Take one pastry circle and spoon approximately 2 tablespoons of the meat filling onto half of the circle. Leave a small margin around the edges.
- Fold the pastry over the filling to create a half-moon shape, pressing the edges together and crimping with a fork.
- Arrange the bridies on a parchment-lined baking tray. Beat an egg and brush it over the tops, cutting a small steam slit on each.
- Bake the bridies in your preheated oven for 20-25 minutes or until golden brown.
- Allow the bridies to cool on the tray for a few minutes before serving warm.

Notes
For best results, consider preparing the filling a day in advance. Store leftovers in an airtight container for up to 3 days.
