Step-by-Step Instructions
  1. Slice the Yukon Gold or new potatoes into even pieces, place in a large pot, fill with cold, salted water, and bring to a boil over medium-high heat. Cook for 12-15 minutes until fork-tender, then drain and set aside to cool slightly.
  2. Whisk together jerk seasoning, lime juice, apple cider vinegar, and minced garlic in a bowl until fully combined. Adjust seasonings to taste. Set aside.
  3. Return slightly cooled potatoes to the pot or a mixing bowl. Pour the jerk vinaigrette over the warm potatoes and toss gently to coat.
  4. Allow the dressed potatoes to cool to room temperature for about 15-20 minutes, then fold in red onion, red bell pepper, cilantro, and thyme. Mix thoroughly without mashing.
  5. Taste and adjust seasonings. Add more salt or cayenne if needed.
  6. Cover and refrigerate for at least 30 minutes before serving for enhanced flavor.
