- Slice the Yukon Gold or new potatoes into even pieces, place in a large pot, fill with cold, salted water, and bring to a boil over medium-high heat. Cook for 12-15 minutes until fork-tender, then drain and set aside to cool slightly.
- Whisk together jerk seasoning, lime juice, apple cider vinegar, and minced garlic in a bowl until fully combined. Adjust seasonings to taste. Set aside.
- Return slightly cooled potatoes to the pot or a mixing bowl. Pour the jerk vinaigrette over the warm potatoes and toss gently to coat.
- Allow the dressed potatoes to cool to room temperature for about 15-20 minutes, then fold in red onion, red bell pepper, cilantro, and thyme. Mix thoroughly without mashing.
- Taste and adjust seasonings. Add more salt or cayenne if needed.
