  • 1 teaspoon Dried Oregano Italian seasoning can be a substitute.
For Freshness
  • 1 cup Green Bell Pepper Feel free to use other peppers for different flavors.
  • 1 medium Tomato Fresh tomatoes preferred; canned are fine in a pinch.
For Serving
  • 1 cup Salsa Choose your favorite brand or make your own!
  • 1 teaspoon Salt Adjust according to your taste.
  • 2 tablespoons Tomato Paste Thickens the mix and intensifies flavor.

Method
 

Step-by-Step Instructions for Sofritas
  1. Drain and prepare the very firm tofu by wrapping it in paper towels to soak up excess water and let it sit for about 15 minutes.
  2. Heat a non-stick frying pan over medium heat, add oil, and add the tofu cubes. Cook undisturbed for about 4 minutes until golden brown.
  3. Flip the tofu and continue to cook for another 4 minutes until golden crust forms on all sides.
  4. In a blender, combine chipotle in adobo sauce, garlic, cumin, smoked paprika, green bell pepper, oregano, fresh tomato, salsa, salt, and tomato paste. Blend until slightly chunky.
  5. Crumble the browned tofu into bite-sized pieces and return to the pan.
  6. Stir in the prepared marinade and simmer on medium heat for about 15 minutes, stirring occasionally.
  7. Serve the sofritas in tacos, burritos, or bowls topped with your favorite additions.
