Step-by-Step Instructions for Sofritas
- Drain and prepare the very firm tofu by wrapping it in paper towels to soak up excess water and let it sit for about 15 minutes.
- Heat a non-stick frying pan over medium heat, add oil, and add the tofu cubes. Cook undisturbed for about 4 minutes until golden brown.
- Flip the tofu and continue to cook for another 4 minutes until golden crust forms on all sides.
- In a blender, combine chipotle in adobo sauce, garlic, cumin, smoked paprika, green bell pepper, oregano, fresh tomato, salsa, salt, and tomato paste. Blend until slightly chunky.
- Crumble the browned tofu into bite-sized pieces and return to the pan.
- Stir in the prepared marinade and simmer on medium heat for about 15 minutes, stirring occasionally.
- Serve the sofritas in tacos, burritos, or bowls topped with your favorite additions.
