Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x9 casserole dish.
  2. Crumble the tube polenta into a bowl and press it firmly into the casserole dish to create the base.
  3. Bake the polenta in the oven for about 15 minutes until slightly set and golden around the edges.
  4. In a skillet over medium heat, cook the ground beef while breaking it up; add taco seasoning and cook until browned.
  5. Reduce heat, stir in black beans and diced green chilis, and warm through for about 3–4 minutes.
  6. Remove baked polenta and evenly spread the beef mixture over the top.
  7. Sprinkle the shredded mozzarella over the beef and return to the oven, baking for another 15 minutes until cheese is bubbly.
  8. Let cool for about 5 minutes before serving to allow layers to settle.
