Ingredients
  

For the Dough
  • 2 cups all-purpose flour Can use whole wheat flour for added nutrition

  • 1 cup shredded cooked chicken Rotisserie chicken works great
  • 1/2 cup salsa Use your favorite variety
  • 1/2 unit onion, thinly sliced Red onion offers a sweeter alternative
  • 1 unit bell pepper, sliced into spears Any variety of bell pepper is suitable
  • 1 TBSP extra virgin olive oil Can use any cooking oil
  • 1 TBSP fajita seasoning Store-bought or homemade
  • 2 cups shredded Mexican blend or mozzarella cheese Cheddar can be used for a sharper taste
  • fresh parsley or cilantro For garnish, optional

Method
 

Preparation Steps
  1. In a mixing bowl, combine 2 cups of all-purpose flour, 4 teaspoons of yeast, 1 teaspoon of kosher salt, and ½ teaspoon of sugar. Gradually pour in 1 cup of warm water while mixing.
  2. Knead the mixture for about 5 minutes until a smooth ball forms. Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour.
  3. Preheat your oven to 450°F (230°C).
  4. In a large bowl, combine 1 cup of shredded chicken, ½ onion, and 1 bell pepper. Drizzle with olive oil and fajita seasoning, then toss to coat.
  5. Lightly oil a pizza pan, transfer the risen dough onto it, and shape it into a round crust.
  6. Spread ½ cup of salsa on the dough, top with 2 cups of cheese, and the seasoned chicken and veggies.
  7. Bake for 12-15 minutes until crust is golden brown and cheese is bubbly. Cool for 5 minutes before slicing.
  8. Garnish with fresh parsley or cilantro before serving.
