  • 1 tbsp Oyster Sauce
  • 1 tbsp Sesame Oil
  • 1 tbsp Chili Garlic Sauce Adjust for desired heat
  • 2 stalks Green Onions Finely chopped
For the Wonton Chips
  • 10 pieces Wonton Wrappers Cut into triangles
  • 2 cups Neutral Oil For frying
For the Spicy Mayo
  • 1/2 cup Mayonnaise
  • 1 tbsp Sriracha Adjust for spice tolerance
For Toppings & Garnish
  • 1 medium Avocado Sliced
  • 2 tbsp Sesame Seeds
  • 1 medium Jalapeño Sliced for spice

Method
 

Preparation Steps
  1. Start by drying and cubing the sushi-grade ahi tuna into bite-sized pieces.
  2. In a mixing bowl, combine the tuna with soy sauce, oyster sauce, sesame oil, chili garlic sauce, and finely chopped green onions. Marinate for 30 to 60 minutes.
  3. Heat neutral oil in a deep skillet to 375°F (190°C) and fry the wonton wrappers until golden.
  4. Whisk together mayonnaise and sriracha in a small bowl to make the spicy mayo.
  5. Arrange the wonton chips on a serving platter, drizzle with spicy mayo, and add the marinated tuna and toppings.
  6. Serve immediately while the chips are still hot and crisp.
