Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Cream together the white sugar and softened butter until smooth and fluffy.
  3. Add the eggs and vanilla extract, beating well until fully incorporated.
  4. Sift the all-purpose flour and baking powder together, then fold into the wet mixture to form dough.
  5. Mash the sweet potato and mix in pumpkin puree, pumpkin pie spice, and powdered sugar until creamy.
  6. Form dough into balls, flatten them, and place about 1 teaspoon of filling in the center.
  7. Seal the dough around the filling and press a thumb to create an indention.
  8. Sprinkle pine nuts into the indentation and create decorative slits on the surface.
  9. Brush with an egg wash and bake for 15-17 minutes until golden brown.
