- Preheat your oven to 350°F (175°C) and season the chuck roast with salt and pepper.
- Heat olive oil in a Dutch oven and sear the seasoned roast for 4-5 minutes on each side.
- Sauté onion, carrots, celery, and pancetta in the pot for 7-8 minutes until softened.
- Add minced garlic and red wine, deglazing the pot, then return the roast with broth, tomatoes, and herbs.
- Cover and braise in the oven for 2.5 to 3 hours until the meat is tender.
- Prepare the polenta by combining broth, half-and-half, and polenta in a casserole dish and bake alongside the roast.
