  • 1 cup Polenta or cornmeal for gluten-free
  • 4 cups Chicken Broth or vegetable broth
  • 1 cup Half-and-Half or heavy cream/milk
  • 4 oz Gorgonzola Cheese or Parmesan/Gruyere
  • 2 tbsp Butter or olive oil for dairy-free

Step-by-Step Instructions for Stracotto Recipe
  1. Preheat your oven to 350°F (175°C) and season the chuck roast with salt and pepper.
  2. Heat olive oil in a Dutch oven and sear the seasoned roast for 4-5 minutes on each side.
  3. Sauté onion, carrots, celery, and pancetta in the pot for 7-8 minutes until softened.
  4. Add minced garlic and red wine, deglazing the pot, then return the roast with broth, tomatoes, and herbs.
  5. Cover and braise in the oven for 2.5 to 3 hours until the meat is tender.
  6. Prepare the polenta by combining broth, half-and-half, and polenta in a casserole dish and bake alongside the roast.
  7. Finish by mixing butter and Gorgonzola into the polenta and serve the roast over it, drizzling sauce on top.
