  • 1 teaspoon Red Pepper Flakes Adjust to taste or omit.
  • to taste Salt and Pepper Essential for seasoning.
  • 1 cup Wine Optional, use dry white wine.
Shrimp Stuffing
  • 1 pound Shrimp Fresh is ideal; frozen works if thawed.
  • 1 large Egg Beaten. Can be omitted for vegan version.
  • ½ cup Breadcrumbs Use seasoned or unseasoned.
Squid
  • 4 pieces Squid Fresh or frozen.

Method
 

Step-by-Step Instructions
  1. Prepare Tomato Sauce: Sauté onion and garlic in olive oil, add tomatoes, tomato paste, oregano, and basil. Season, boil, then simmer for 10 minutes.
  2. Make Shrimp Stuffing: Purée shrimp in a food processor, then mix with onion, garlic, egg, and breadcrumbs.
  3. Stuff Squid: Fill each squid with stuffing, secure ends with toothpicks.
  4. Cook Squid: Fry stuffed squid until golden, then simmer in tomato sauce for 20 minutes.
  5. Fry Tentacles (optional): If using tentacles, fry until golden brown and crispy.
  6. Serve: Arrange squid over sauce, garnish with tentacles and parsley.
