Ingredients
  

For the Meatballs
  • 1 pound Ground Lamb or Beef Can substitute with ground turkey or plant-based alternative.
  • 2 cloves Garlic Or garlic powder if fresh isn't available.
  • 1 teaspoon Coriander
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
For the Soup Base
  • 4 cups Chicken Broth Or vegetable broth for vegetarian version.
  • 2 tablespoons Olive Oil Can substitute with vegetable oil.
  • 2 small Shallots Or onion if out.
  • 2 tablespoons Tomato Paste Pureed canned tomatoes can be used as a substitute.
  • 2 cups Water Adjusts consistency.
For the Couscous
  • 1 cup Pearl Couscous Substitute with quinoa or rice for gluten-free.
For the Garnish
  • 1/4 cup Mint or Parsley Cilantro can be used as an alternative.

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine ground lamb or beef, spices, salt, pepper, and tomato paste. Mix gently until just combined, roll into small meatballs, and bake at 375°F for 10–12 minutes.
  2. Heat olive oil in a medium saucepan over medium heat, add pearl couscous, toast for 1–2 minutes, add salt and water, boil, cover, and simmer for 8–10 minutes.
  3. In a large pot, heat olive oil, sauté shallots for 2 minutes, add garlic, cook for 30 seconds, pour in chicken broth and water, simmer for 5 minutes.
  4. Add baked meatballs and cooked couscous to pot, simmer for another 10 minutes, adjust seasoning, and serve topped with mint or parsley.
