  • ¾ cup Red enchilada sauce or substitute with salsa
  • 1 cup Shredded mozzarella cheese mix with Colby jack for added flavor
  • 1 cup Shredded Colby jack, Monterey jack, or cheddar cheese use your favorite melting cheese
  • 2 cups Shredded chicken breast using rotisserie chicken saves time
  • ¼ cup Red onion, diced small substitute with green onions or omit if desired
  • 1 cup Corn kernels canned, frozen, or fresh
For the Toppings
  • 3 tablespoons Queso fresco or cotija cheese or substitute with feta
  • ½ cup Fresh cilantro, chopped optional, depending on preference
For the Elote Sauce
  • 3 tablespoons Mayonnaise or substitute with Greek yogurt for lighter version
  • 1 each Lime juice fresh is best, bottled works in a pinch
  • 1/8 teaspoon Chili powder adjust according to spice preference

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare your baking sheet.
  2. Spread ¾ cup of red enchilada sauce evenly over the flatbread.
  3. Evenly sprinkle 1 cup of shredded mozzarella and Colby jack cheese over the sauced flatbread, then add chicken, corn, and onion.
  4. Bake for 8-10 minutes until cheese is melted and bubbly.
  5. Cool for 5 minutes, then garnish with cilantro and queso fresco.
  6. In a bowl, mix mayonnaise, lime juice, and chili powder to make the elote sauce.
  7. Drizzle elote sauce over the flatbread, slice, and serve immediately.
