Preparation Steps
- Preheat your oven to 400°F (200°C) and grease an 8 x 8-inch baking pan with coconut oil.
- In a measuring cup, combine 1 cup of non-dairy milk with 1 tablespoon of apple cider vinegar and let it sit for 3-5 minutes.
- In a large mixing bowl, whisk together cornmeal, gluten-free flour blend, oat flour, granulated sugar, baking powder, baking soda, and sea salt.
- Add the non-dairy milk mixture, applesauce, and melted coconut oil to the dry ingredients and mix gently until just combined.
