- Preheat your oven to 400°F (200°C).
- Pat your cod fillets dry with paper towels to eliminate excess moisture.
- In a mixing bowl, combine the all-purpose flour, ground coriander, paprika, cumin, salt, black pepper, and red pepper flakes. Whisk these dry ingredients together thoroughly.
- In a separate bowl, whisk together the fresh lemon juice, extra virgin olive oil, and melted butter, then add the minced garlic.
- Dip each cod fillet into the lemon-garlic mixture, then dredge it in the flour mixture. Shake off any excess flour.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the cod fillets for about 2 minutes on each side until golden brown.
- Pour the remaining lemon-garlic sauce over the cod fillets in the skillet and then transfer the skillet to the preheated oven.
