- Preheat the oven to 425°F (220°C).
- Core and chop the apples into ½” cubes. Peel and slice the carrots into ¼” thick pieces. Finely dice the onion and chop the garlic.
- In a mixing bowl, whisk together olive oil, maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme.
- Add the chopped carrots, apples, onions, and garlic to the bowl with the dressing. Toss until evenly coated.
- Spread the mixture onto a metal sheet pan and roast for 15 minutes.
- After 15 minutes, flip the mixture and roast for an additional 10-15 minutes until tender and caramelized.
