  • 1 tablespoon Maple Syrup
  • 2 tablespoons Stone Ground Dijon Mustard
For Seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Thyme fresh or dried

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Core and chop the apples into ½” cubes. Peel and slice the carrots into ¼” thick pieces. Finely dice the onion and chop the garlic.
  3. In a mixing bowl, whisk together olive oil, maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme.
  4. Add the chopped carrots, apples, onions, and garlic to the bowl with the dressing. Toss until evenly coated.
  5. Spread the mixture onto a metal sheet pan and roast for 15 minutes.
  6. After 15 minutes, flip the mixture and roast for an additional 10-15 minutes until tender and caramelized.
