  • food gel coloring optional
For Garnish
  • fresh thyme or pearl sugar

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C) to ensure even baking.
  2. In a food processor, combine flour, icing sugar, salt, grapefruit zest, and fresh thyme. Pulse until mixed. Gradually add cold butter, processing until a rough dough ball forms.
  3. Transfer dough into a 9-inch fluted tart pan, pressing evenly. Bake for 35-40 minutes until edges are golden and the cookie is firm.
  4. Allow to cool for 5 minutes before cutting into 16 pieces while still warm, then cool completely in the pan.
  5. Prepare the icing by mixing grapefruit juice with icing sugar until smooth. Adjust as needed for consistency.
  6. Dip the tops of completely cooled cookies into icing and allow to set on a drying rack.
  7. Sprinkle fresh thyme or pearl sugar on top for garnish once the icing has set.
