For the Filling
  • 1 ripe avocado Make sure it’s soft (but not mushy).
  • 1 medium cucumber thinly sliced; zucchini ribbons can substitute.
  • 1/2 cup fresh leafy greens Lettuce, spinach, or arugula.
  • 1/4 cup cherry tomatoes halved (optional).
  • 2 tbsp red onion thinly sliced; adjust based on taste.
  • 1 tbsp fresh herbs chopped (dill, basil, or cilantro).
  • 1 tsp lemon juice to prevent avocado from browning.
  • salt and pepper to taste.
For Extra Flavor
  • 1 tsp olive oil or favorite sandwich spread optional for added moisture and flavor.

Method
 

Step-by-Step Instructions
  1. Step 1: Toast the Bread (Optional) - If desired, toast two slices of your chosen bread until golden brown, about 3-5 minutes. Set aside to cool.
  2. Step 2: Prepare the Avocado Mixture - Mash the ripe avocado in a bowl, mix in lemon juice, and season with salt and pepper.
  3. Step 3: Spread the Avocado - Spread the mashed avocado mixture over one side of each slice of bread.
  4. Step 4: Layer the Cucumbers - Layer the thinly sliced cucumber over the avocado on one slice of bread.
  5. Step 5: Add Fresh Greens - Add leafy greens on top of the cucumbers and scatter optional tomatoes and red onion.
  6. Step 6: Sprinkle with Fresh Herbs - Top with fresh herbs and drizzle with olive oil or spread if desired.
