  • 4 cups frozen cauliflower rice or fresh cauliflower
  • 1 pound ground turkey or beef, chicken, or pork
  • 2 tablespoons bacon grease or olive oil olive oil is a healthier option
For the Veggies
  • 1 medium diced onion or frozen diced onions
  • 1 cup chopped celery or bell pepper
  • 1 cup diced red bell pepper or yellow/green peppers
For Seasoning
  • 3 cloves minced garlic or chopped garlic
  • 1 teaspoon paprika smoked paprika for bolder taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste cayenne pepper optional heat
  • to taste salt or garlic salt
  • to taste black pepper freshly cracked preferred
For the Liquid
  • ½ cup water or chicken stock chicken stock for richer flavor
For Garnish
  • to taste sliced green onions optional but recommended

Method
 

Step-by-Step Instructions
  1. In a heavy-bottom skillet, heat medium-high heat and add bacon grease or olive oil. Once shimmering, add ground turkey, seasoning with salt and black pepper. Cook for 5-7 minutes until browned.
  2. Reduce heat to medium and stir in diced onion, chopped celery, and diced red bell pepper. Sauté for around 5 minutes until tender and fragrant.
  3. Stir in minced garlic, paprika, oregano, thyme, and optional cayenne. Cook for an additional minute, allowing the garlic to release aroma and spices to coat the mixture.
  4. Add frozen cauliflower rice and chicken stock or water. Stir to combine, then cover and steam for about 5 minutes to soften.
  5. Remove the lid and stir, allowing excess liquid to evaporate. Cook for another 3-5 minutes until soft and cohesive.
  6. Garnish with sliced green onions and serve warm as a side or main dish.
