- In a heavy-bottom skillet, heat medium-high heat and add bacon grease or olive oil. Once shimmering, add ground turkey, seasoning with salt and black pepper. Cook for 5-7 minutes until browned.
- Reduce heat to medium and stir in diced onion, chopped celery, and diced red bell pepper. Sauté for around 5 minutes until tender and fragrant.
- Stir in minced garlic, paprika, oregano, thyme, and optional cayenne. Cook for an additional minute, allowing the garlic to release aroma and spices to coat the mixture.
- Add frozen cauliflower rice and chicken stock or water. Stir to combine, then cover and steam for about 5 minutes to soften.
- Remove the lid and stir, allowing excess liquid to evaporate. Cook for another 3-5 minutes until soft and cohesive.
- Garnish with sliced green onions and serve warm as a side or main dish.
