Preparation
- Shuck the fresh corn and rinse under cold water, then pat dry.
- In a mixing bowl, whisk together kewpie mayonnaise, sriracha, soy sauce, sesame oil, and ginger until smooth.
- Preheat the grill to medium heat, around 400°F.
- Brush corn with olive oil and season with salt and pepper. Grill for 8 to 10 minutes, turning occasionally.
- Remove corn from grill, brush with spicy mayo, and sprinkle with toppings.
- Serve immediately with lime wedges on the side.
