- Preheat your oven to 200°C (390°F) for fan-assisted or 210°C (410°F) for conventional.
- Combine granulated sugar with freshly grated orange zest in a medium bowl, rubbing the zest into the sugar.
- Roll out the puff pastry to about 2-3mm thick, keeping it cold to ensure flakiness.
- Coat the rolled-out pastry with the egg yolk using a pastry brush, then sprinkle the sugar and orange zest mixture evenly.
- Carefully roll the pastry from one edge to the center and slice into 1/4-inch-wide pieces.
- Place the sliced cookies on lined baking sheets and bake for about 12-14 minutes, rotating halfway through.
- Melt the dark chocolate in a microwave-safe bowl, heating in short bursts and stirring until smooth.
- Dip one-half of each cooled cookie into the melted chocolate and allow excess to drip off before placing on a wire rack.
