Ingredients

For the Pudding
  • 3 large Ripe Bananas Use firm bananas that are ready to eat.
  • 1/2 cup Granulated Sugar Consider using a sugar substitute for a lower-calorie option.
  • 4 large Egg Yolks Can be replaced with a cornstarch alternative for an egg-free version.
  • 1/4 cup Cornstarch Can substitute with arrowroot powder for a gluten-free alternative.
  • 2 cups Whole Milk Almond milk or oat milk may be used as dairy-free alternatives.
  • 1/4 cup Salted Butter Unsalted butter can be used instead, just add a pinch of salt in the mix.
  • 1 teaspoon Vanilla Extract Homemade vanilla extract can enhance the taste.
For the Matcha Whipped Cream
  • 1 cup Heavy Whipping Cream Substitutable with coconut cream for a dairy-free option.
  • 2 tablespoons Matcha Powder Opt for ceremonial grade for the best quality.
For the Assembly
  • 1 box Vanilla Wafers Can substitute with graham crackers for a different flavor profile.

Equipment

  • Heavy-bottomed saucepan
  • mixing bowl
  • electric mixer
  • plastic wrap

Method

Step-by-Step Instructions
  1. In a heavy-bottomed saucepan, whisk together egg yolks, granulated sugar, cornstarch, and whole milk. Heat the mixture over low heat, continually whisking for about 8-10 minutes until it thickens and bubbles gently. Once thickened, remove from heat and stir in salted butter and vanilla extract.
  2. Pour the vanilla pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface. Refrigerate for at least 1 hour.
  3. In a mixing bowl, combine heavy whipping cream with sifted matcha powder. Beat on medium speed until soft peaks form, about 3-5 minutes.
  4. Take the chilled pudding and beat briefly until smooth. Gently fold in the matcha whipped cream. Layer the pudding mixture with sliced bananas and vanilla wafers in serving dishes.
  5. Cover the assembled pudding tightly and refrigerate for a minimum of 4 hours, or overnight. Top with extra whipped cream, banana slices, and vanilla wafers before serving.

Notes

Allow ample chilling time for the pudding layers to meld and the vanilla wafers to soften—at least 4 hours, but overnight is ideal for best results.
