- Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
- Chop the cauliflower into florets and toss with olive oil and minced garlic. Roast for 25–30 minutes.
- In a skillet, cook bacon until crispy, about 7–10 minutes, then set aside on a paper towel-lined plate.
- In a bowl, combine softened cream cheese, Greek yogurt, and cheddar. Blend until smooth.
- Layer half the roasted cauliflower in a baking dish, add cream cheese mixture, then top with remaining cauliflower and mixture.
- Bake for approximately 8 minutes until the cheese is melted and bubbly.
- Top with remaining cheddar, Parmesan, scallions, and bacon. Bake for a few more minutes until heated through.
