- Mix the dry ingredients: Combine flour, granulated sugar, and salt in a stand mixer on low speed for 30 seconds.
- Incorporate the wet ingredients: Add cubed butter, egg, and vanilla extract; mix on medium speed until dough forms, about 2-3 minutes.
- Chill the dough: Shape into a disc, wrap in plastic, and refrigerate for 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment.
- Roll and cut the dough: Roll to 1/4 inch thick and cut out shapes; bake for 20 minutes until edges are golden.
- Spread the apricot jam on half the cookies, then create sandwiches with the remaining cookies.
