Method
 

Step-by-Step Instructions
  1. Mix the dry ingredients: Combine flour, granulated sugar, and salt in a stand mixer on low speed for 30 seconds.
  2. Incorporate the wet ingredients: Add cubed butter, egg, and vanilla extract; mix on medium speed until dough forms, about 2-3 minutes.
  3. Chill the dough: Shape into a disc, wrap in plastic, and refrigerate for 1 hour.
  4. Preheat the oven to 350°F (175°C) and line baking sheets with parchment.
  5. Roll and cut the dough: Roll to 1/4 inch thick and cut out shapes; bake for 20 minutes until edges are golden.
  6. Spread the apricot jam on half the cookies, then create sandwiches with the remaining cookies.
  7. Prepare the almond paste: Roll out and cut out rounds to place on top of the jam-covered cookies.
  8. Melt chocolate until smooth and dip the tops of cookies into it, then let set.
  9. Caramelize the cashews in a pan, add sugar, and cool slightly; sprinkle on the cookies.
