  • 1/4 cup Natural Sweetener (honey or maple syrup) adjust to taste
  • 1 cup Rolled Oats do not use instant oats
  • 1 teaspoon Vanilla Extract preferably pure
For the Extras
  • 1/2 cup Chocolate Chips optional, use dark or vegan for dairy-free
  • 1/2 cup Dark Chocolate for coating, optional

Method
 

Preparation Steps
  1. Blend the cottage cheese, natural sweetener, and vanilla extract until smooth.
  2. Mix the rolled oats and dry ingredients in a bowl.
  3. Combine the cottage cheese mixture with the dry ingredients.
  4. Fold in the chocolate chips or desired mix-ins.
  5. Form the mixture into 1-inch balls and place on a parchment-lined tray.
  6. Chill the bites for at least 30 minutes.
  7. Optional: Melt dark chocolate and coat each bite before refrigerating again for 15 minutes.
