For the Salad
  • 4 Nectarines Look for ripe, fragrant nectarines.
  • 8 oz Burrata Cheese If unavailable, fresh mozzarella can be used.
  • 4 oz Prosciutto For a vegetarian version, omit.
  • 1 cup Cherry Tomatoes Any small tomato variety will work.
  • 1 cup Heirloom Tomatoes Substitute with regular tomatoes if heirloom is not available.
  • 1 cup Fresh Cherries Dried cherries can work in a pinch.
  • 5 oz Mixed Baby Greens Spinach or arugula can also be used.
For the Vinaigrette
  • 2 tbsp Lemon Juice Fresh lemon is best for optimum flavor.
  • 1 tbsp White Wine Vinegar
  • 1 tsp Fresh Oregano Alternatively, use dried herbs but use less.
  • 1 tsp Fresh Mint Alternatively, use dried herbs but use less.
  • 1 tsp Lemon Thyme Alternatively, use dried herbs but use less.
  • 4 tbsp Extra Virgin Olive Oil A high-quality oil enhances overall flavor.
  • 1 pinch Salt Use finishing salt for garnish.
  • 1 pinch Black Pepper

Method
 

Preparation
  1. Preheat the grill or grill pan over medium-high heat for about 5 minutes.
  2. Slice the nectarines in half to remove the pits, then quarter and brush with olive oil.
  3. Grill the nectarines for 2-3 minutes on each side until caramelized.
  4. In a bowl, whisk together lemon juice, vinegar, zest, and herbs. Drizzle in olive oil while whisking until emulsified. Season with salt and pepper.
  5. In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, and cherries. Pour vinaigrette over and toss gently.
  6. Tear burrata and scatter over salad. Add prosciutto slices.
  7. Garnish with fresh herbs, black pepper, and finishing salt. Serve immediately.
