Preparation
- Preheat the grill or grill pan over medium-high heat for about 5 minutes.
- Slice the nectarines in half to remove the pits, then quarter and brush with olive oil.
- Grill the nectarines for 2-3 minutes on each side until caramelized.
- In a bowl, whisk together lemon juice, vinegar, zest, and herbs. Drizzle in olive oil while whisking until emulsified. Season with salt and pepper.
- In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, and cherries. Pour vinaigrette over and toss gently.
- Tear burrata and scatter over salad. Add prosciutto slices.
- Garnish with fresh herbs, black pepper, and finishing salt. Serve immediately.
