Ingredients
  

For the Pasta
  • 8 oz Linguine Cook according to package instructions
For the Vegetables
  • 1 bunch Broccolini Can substitute with broccoli
  • 3 pieces Scallions Chopped; can substitute chives
  • 3 cloves Garlic Minced; fresh preferred
For the Olives
  • 1 cup Castelvetrano Olives Or substitute with Kalamata olives
For the Sauce
  • 3 Tbsp Butter Can use vegan butter
  • 2 Tbsp Lemon Juice Freshly squeezed
  • 1 tsp Lemon Zest
  • 1 tsp Black Pepper Adjust to taste
For the Topping
  • 1/2 cup Parmesan Cheese Or nutritional yeast for vegan option
  • 1 cup Whole Grain Breadcrumbs Can use regular breadcrumbs
For Cooking
  • 2 Tbsp Olive Oil For sautéing

Method
 

Cooking Steps
  1. Start by bringing a large pot of salted water to a rolling boil.
  2. When the water is boiling, add the broccolini and blanch for about 2 minutes.
  3. In a skillet over medium heat, add olive oil and toast the breadcrumbs for about 4-5 minutes.
  4. Using the same skillet, add a splash of olive oil, char the broccolini for about 3-4 minutes.
  5. Return to the pot of boiling water and add the linguine, cooking for 8-9 minutes.
  6. In the same skillet, reduce heat to medium and sauté the butter, scallions, and garlic.
  7. Pour in about half a cup of reserved pasta water and simmer for 2 minutes.
  8. Gradually stir in the parmesan cheese and toss the linguine.
  9. Fold in the chopped, charred broccolini gently.
  10. Serve the pasta topped with breadcrumbs and additional parmesan.
