Cooking Steps
- Start by bringing a large pot of salted water to a rolling boil.
- When the water is boiling, add the broccolini and blanch for about 2 minutes.
- In a skillet over medium heat, add olive oil and toast the breadcrumbs for about 4-5 minutes.
- Using the same skillet, add a splash of olive oil, char the broccolini for about 3-4 minutes.
- Return to the pot of boiling water and add the linguine, cooking for 8-9 minutes.
- In the same skillet, reduce heat to medium and sauté the butter, scallions, and garlic.
- Pour in about half a cup of reserved pasta water and simmer for 2 minutes.
- Gradually stir in the parmesan cheese and toss the linguine.
- Fold in the chopped, charred broccolini gently.
- Serve the pasta topped with breadcrumbs and additional parmesan.
