- Start by washing the radishes thoroughly under cold water. Trim off the tops and tails, then slice them into 1/8-inch rounds.
- Squeeze the juice of half a lemon over the sliced radishes, adding a pinch of salt. Massage the radish slices for 1-2 minutes until they soften slightly.
- Drizzle olive oil into the bowl with the radishes, then add the Parmesan cheese and dill. Toss gently with hands or salad tongs.
- Transfer the salad to a serving plate, spreading the radish slices evenly.
- Zest the remaining half of the lemon over the top, add more Parmesan and sprinkle with black pepper. Serve immediately.
