Method
 

Instructions
  1. Start by washing the radishes thoroughly under cold water. Trim off the tops and tails, then slice them into 1/8-inch rounds.
  2. Squeeze the juice of half a lemon over the sliced radishes, adding a pinch of salt. Massage the radish slices for 1-2 minutes until they soften slightly.
  3. Drizzle olive oil into the bowl with the radishes, then add the Parmesan cheese and dill. Toss gently with hands or salad tongs.
  4. Transfer the salad to a serving plate, spreading the radish slices evenly.
  5. Zest the remaining half of the lemon over the top, add more Parmesan and sprinkle with black pepper. Serve immediately.
