Ingredients

Base Ingredients
  • 2 ripe mangoes Use ripe mangoes for best results; they provide the primary sweetness and tropical flavor.
  • 1 cup plain yogurt Choose plain yogurt for a neutral flavor, or use Greek yogurt for a thicker, creamier texture.
  • 1-2 tablespoons sugar Adjust based on the sweetness of your mangoes; alternatives like honey or maple syrup can be used.
  • 1 teaspoon cardamom powder Optional; it adds a warm, aromatic touch that pairs beautifully with mango but can be replaced with cinnamon.
Topping Ingredients
  • handful crushed pistachios They provide a delightful crunch on top; feel free to substitute or omit for allergy considerations.
  • handful crushed almonds They provide a delightful crunch on top; feel free to substitute or omit for allergy considerations.

Equipment

  • blender
  • Cake pan

Method

Preparation Steps
  1. Begin by peeling and chopping 2 ripe mangoes. Blend until smooth to achieve about 1 cup of mango puree.
  2. Line a cake pan or baking tray with parchment paper for easy removal later.
  3. Combine mango puree, 1 cup of yogurt, 1-2 tablespoons of sugar, and an optional dash of cardamom in a blender. Blend until smooth.
  4. Pour the mango-yogurt mixture into the prepared pan and smooth the top with a spatula.
  5. Sprinkle crushed pistachios and almonds evenly over the top and gently press them into the surface.
  6. Freeze the mixture for about 3 hours, or until solid. For firmer bars, freeze an additional hour or two.
  7. Cut the semi-frozen mixture into squares and return bars to the freezer for at least another hour to set completely.
  8. Remove from the pan and serve immediately or store in Ziploc bags in the freezer.
