Preparation Steps
- Begin by peeling and chopping 2 ripe mangoes. Blend until smooth to achieve about 1 cup of mango puree.
- Line a cake pan or baking tray with parchment paper for easy removal later.
- Combine mango puree, 1 cup of yogurt, 1-2 tablespoons of sugar, and an optional dash of cardamom in a blender. Blend until smooth.
- Pour the mango-yogurt mixture into the prepared pan and smooth the top with a spatula.
- Sprinkle crushed pistachios and almonds evenly over the top and gently press them into the surface.
- Freeze the mixture for about 3 hours, or until solid. For firmer bars, freeze an additional hour or two.
- Cut the semi-frozen mixture into squares and return bars to the freezer for at least another hour to set completely.
- Remove from the pan and serve immediately or store in Ziploc bags in the freezer.
