- In a bowl, combine chopped stems, cream cheese, sausage or bacon, Parmesan, garlic, parsley, salt, and pepper. Mix thoroughly.
- Stuff each mushroom cap with the mixture, pressing down slightly to pack the filling.
- Arrange mushrooms on a greased baking sheet and press an olive into each cap as the pupil.
- Bake for 20-25 minutes until the mushrooms are tender and the filling is bubbling.
