- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- Boil a large pot of water, add manicotti shells and cook for 5-6 minutes until slightly firm. Drain and rinse under cold water.
- Combine ricotta cheese, drained spinach, 1½ cups mozzarella, Parmesan, eggs, Italian seasoning, salt, pepper, and minced garlic in a large bowl. Mix thoroughly.
- Fill each manicotti shell with the cheese filling using a piping bag or zip-lock bag.
- Pour ½ cup pasta sauce into the baking dish. Arrange filled shells in a single layer, cover with remaining sauce, and top with remaining mozzarella.
- Cover with aluminum foil and bake for 35-40 minutes until cheese is bubbly.
- Remove foil and bake for an additional 10 minutes to brown the cheese on top. Let rest before serving.
- Serve with salad or garlic bread.
