Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Boil a large pot of water, add manicotti shells and cook for 5-6 minutes until slightly firm. Drain and rinse under cold water.
  3. Combine ricotta cheese, drained spinach, 1½ cups mozzarella, Parmesan, eggs, Italian seasoning, salt, pepper, and minced garlic in a large bowl. Mix thoroughly.
  4. Fill each manicotti shell with the cheese filling using a piping bag or zip-lock bag.
  5. Pour ½ cup pasta sauce into the baking dish. Arrange filled shells in a single layer, cover with remaining sauce, and top with remaining mozzarella.
  6. Cover with aluminum foil and bake for 35-40 minutes until cheese is bubbly.
  7. Remove foil and bake for an additional 10 minutes to brown the cheese on top. Let rest before serving.
  8. Serve with salad or garlic bread.
