  1. Begin by bringing a pot of water to a rolling boil. Add sago pearls and reduce heat to medium. Cook for about 15 minutes, stirring, until mostly transparent. Cover and let sit for 10-15 minutes.
  2. Strain sago through a fine mesh sieve and rinse under cold water to remove excess starch. Keep in cold water while preparing remaining ingredients.
  3. In a bowl, sift matcha powder to eliminate clumps, then add hot water and whisk until frothy. Mix in choice of milk until thoroughly combined.
