For the Yogurt Base
  • 2 cups Fresh strawberries Hulled and chopped
  • 1 cup Unsweetened yogurt Use coconut milk yogurt for vegan
  • 1/4 cup Maple syrup Can substitute with honey or agave
  • 2 tablespoons Tapioca starch Optional for creaminess
  • 1 cup White chocolate Optional for coating

Method
 

Step-by-Step Instructions
  1. Wash and hull about 2 cups of fresh strawberries and chop them. Place in blender with 1 cup yogurt and 1/4 cup maple syrup.
  2. Blend on high speed for about 30-45 seconds until smooth.
  3. Pour the mixture into silicone popsicle molds and insert popsicle sticks.
  4. Freeze for at least 4 hours or until solid.
  5. Melt 1 cup of white chocolate and dip the bars if desired.
  6. Allow chocolate to set on a parchment-lined baking sheet.
  7. Serve immediately or store in an airtight bag in the freezer for up to two months.
