  • 1 cup Vanilla Wafer Crumbs or graham cracker crumbs for a unique twist
  • 8 oz Cream Cheese softened
  • 1 cup Powdered Sugar adjust according to desired sweetness
  • 1/4 cup Fresh Lime Juice fresh limes yield the best taste
  • 2 Tbsp Tequila adjust or omit based on preference
  • 1 Tbsp Orange Liqueur optional; substitute with orange juice if avoiding alcohol

Method
 

Mixing and Chilling
  1. In a large mixing bowl, combine the vanilla wafer crumbs, softened cream cheese, powdered sugar, fresh lime juice, and tequila. Blend until smooth, about 2-3 minutes.
  2. Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
Forming and Coating
  1. After chilling, roll small portions of the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  2. Mix lime zest and additional powdered sugar in a small bowl. Roll each ball in this mixture until fully coated.
  3. Return the coated balls to the refrigerator for at least 1 hour before serving.
