  • 500 grams bread flour about 4 cups

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the lukewarm water, active dry yeast, and honey. Allow to sit for 10 minutes until frothy.
  2. Add olive oil, tahini, and sea salt into the yeast mixture. Gradually incorporate the bread flour until a moist dough forms.
  3. Shape the dough into a ball, coat with olive oil, cover with a damp cloth, and let rise in a warm spot for 1 to 1.5 hours until doubled.
  4. Punch down the risen dough, divide into two pieces, shape into rectangles, and place on a parchment-lined baking sheet for another 30 minutes rising time.
  5. Preheat oven to 375°F, brush the tops with olive oil or honey-water mix, and sprinkle sesame seeds generously.
  6. Dimple the dough lightly and bake for 25-30 minutes until golden brown and sounds hollow when tapped.
  7. Let cool on a wire rack for a few minutes, then slice and serve warm.
