Cooking Steps
  1. Heat olive oil in a large pot over medium heat. Add red onion, bell peppers, and garlic; sauté for 3-5 minutes until softened.
  2. Stir in chicken breasts, black beans, fire-roasted tomatoes, chicken broth, and fajita seasoning. If using brown rice, add water.
  3. Bring soup to boil over high heat, then reduce to low and cover. Simmer gently for 20 minutes.
  4. Remove chicken from the pot and shred on a cutting board. Return shredded chicken to the pot.
  5. Adjust cooking time if brown rice is added; simmer an additional 10-15 minutes until cooked through.
  6. Taste the soup and adjust seasoning with salt, pepper, or hot sauce as desired.
