Step-by-Step Instructions for Brown Sugar Glazed Tofu Ham
  1. Press the extra firm tofu for 3–4 hours to remove excess moisture, then poke holes in the tofu with a fork.
  2. Whisk together soy sauce or tamari, chili garlic sauce, spicy brown mustard, thyme, smoked paprika, and nutritional yeast. Coat the tofu fully and marinate in the refrigerator for at least 24 hours.
  3. Preheat your oven to 400°F (200°C). Bake the marinated tofu on a lined baking sheet for 20 minutes.
  4. Prepare the glaze by combining brown sugar and spicy brown mustard in a saucepan over low heat until smooth.
  5. Brush the tofu ham with the glaze and bake for an additional 25–30 minutes.
  6. Let the tofu ham rest for about 10 minutes before slicing and serving.
