Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour, sugar, and salt. Cut in cold, unsalted butter until the mixture resembles pea-sized crumbs. Gradually add cold water, stirring until a dough forms. Chill in the refrigerator for at least 2 hours.
  2. Peel, core, and chop about 6 cups of apples. Toss apple chunks with lemon juice, sugar, cornstarch, and spices. Let sit for about 15 minutes.
  3. Preheat your oven to 375°F (190°C). Roll out the larger piece of dough on a lightly floured surface to fit a 10x15-inch baking sheet. Transfer the rolled dough to the baking sheet.
  4. Spoon the prepared apple filling evenly over the crust. Roll out the second piece of dough and place it over the apples. Seal the edges by crimping.
  5. Brush the top of the pie with heavy cream or egg wash. Sprinkle a little sugar over the top.
  6. Place the assembled pie in the oven and bake for 40-45 minutes or until the crust is golden and the filling is bubbly.
  7. Allow to cool for at least 15-20 minutes before slicing. Serve warm with ice cream.
