- Preheat your oven to 425°F (220°C).
- Rinse the fresh radishes thoroughly under cold water, pat dry, trim tops and tails, then slice each radish in half lengthwise. For larger radishes, quarter them.
- Combine the halved radishes with olive oil, salt, garlic powder, and cracked black pepper in a mixing bowl and toss gently until evenly coated.
- Arrange the seasoned radishes cut-side down in a single layer on a large baking sheet.
- Roast the radishes in the preheated oven for 15 minutes. Toss them and return to the oven for an additional 10-15 minutes until tender and golden brown.
- Remove from the oven, let cool slightly, and sprinkle with fresh herbs before serving warm.
