  • 2 cups shredded rotisserie chicken preferably leftover
  • 1 cup full-fat Greek yogurt can substitute with lighter yogurt
  • 1 large cucumber sliced thinly
  • 2 tablespoons dill fresh or dried
  • 2 tablespoons green onion chopped
  • to taste salt
  • to taste pepper
For Serving
  • 4 slices whole grain bread or croissants
  • 2 cups mixed greens

Preparation Steps
  1. Shred the leftover rotisserie chicken into bite-sized pieces in a large mixing bowl.
