Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the ribeye steak with soy sauce, oyster sauce, fish sauce, brown sugar, and black pepper. Marinate for at least 30 minutes.
  2. Heat a grill or cast-iron pan over medium-high heat. Add cooking oil and grill the steak for 3-5 minutes per side.
  3. While the steak cooks, toast the glutinous rice in a dry pan over low heat until golden brown, about 5 minutes.
  4. Grind the toasted rice with palm sugar in a mortar or food processor until finely textured.
  5. In a bowl, combine ground rice with fish sauce, tamarind paste, lime juice, chili flakes, shallots, and cilantro. Adjust seasoning.
  6. Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain. Serve with dipping sauce and rice or veggies.
