  • 2 cups All-Purpose Flour or gluten-free flour
  • 1 tablespoon Granulated Sugar can be reduced or substituted
  • 1 teaspoon Salt essential for flavor
  • ½ cup Unsalted Butter cold, diced
  • 1 large Egg or flax egg for vegan option
  • ½ cup Cold Water for best results
Filling Ingredients
  • 8 oz Queso Blanco or semi-soft white cheese like mozzarella
Frying Ingredients
  • 4 cups Vegetable Oil for frying

Method
 

Dough Preparation
  1. In a mixing bowl, combine flour, sugar, and salt. Incorporate cold butter until coarse crumbs form.
  2. Add egg and cold water, mix until a soft dough forms. Wrap and refrigerate for 30 minutes.
Cheese Preparation
  1. Slice Queso Blanco into 4-inch sticks. Keep refrigerated until ready to wrap.
Dough Rolling
  1. Roll chilled dough on a floured surface into a rectangle. Cut into 8 strips of about 1.5 inches wide.
Wrap Cheese
  1. Place cheese stick at the edge of a dough strip, wrap tightly, and seal ends. Repeat with remaining cheese.
Frying
  1. Heat oil to 350°F (180°C). Fry tequeños for 2-3 minutes until golden brown, turning occasionally.
Serving
  1. Transfer fried tequeños to a towel-lined plate. Serve warm with dips like Guasacaca or Salsa Rosada.
