Step-by-Step Instructions
  1. Prepare Dough: In a mixing bowl, combine all-purpose flour and salt, then gradually mix in vegetable oil until crumbly. Slowly add water a little at a time, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for about 30 minutes.
  2. Make Filling: Boil the potato until tender, about 15 minutes. Drain and mash. In a pan, melt butter, sauté onions until soft, add jalapeño and ginger, along with spices. Incorporate mashed potatoes, peas, and cilantro.
  3. Shape Samosas: Divide dough into six balls, roll each into a circle, cut in half, shape into a cone, fill with potato mixture, and seal.
  4. Fry Samosas: Heat vegetable oil to 200°F, fry samosas in batches for about 15 minutes, turning until golden brown. Drain on paper towels.
  5. Serve and Enjoy: Serve warm with mint yogurt or tamarind chutney.
