- Preheat your oven to 200°C (400°F). Drizzle olive oil into a large skillet or roasting tray.
- Rinse the potatoes thoroughly and pierce them a few times with a fork. Microwave for 7-12 minutes until fork-tender.
- Gently transfer the potatoes to the prepared skillet and smash them to expose some flesh.
- Drizzle olive oil over the smashed potatoes, and sprinkle with salt, pepper, garlic, rosemary, and lemon wedges.
- Roast in the oven for about 10 minutes until the edges are golden.
- Remove from the oven and add feta, red onion, and capers (or olives) on top.
- Roast for another 5 minutes, then squeeze fresh lemon juice over before serving.
