Ingredients
  

For the Potatoes
  • 8-12 medium potatoes such as King Edward or Yukon Gold
  • 2-4 tablespoons extra virgin olive oil for drizzling
  • to taste salt
  • to taste pepper
For the Flavor Boosters
  • 100 grams feta cheese crumbled
  • 3-4 cloves garlic thinly sliced
  • 1 medium red onion sliced
  • 2-3 tablespoons capers or black olives optional
For the Herb Infusion
  • 2-3 sprigs rosemary fresh
  • 1 medium lemon cut into wedges

Method
 

Preparation Instructions
  1. Preheat your oven to 200°C (400°F). Drizzle olive oil into a large skillet or roasting tray.
  2. Rinse the potatoes thoroughly and pierce them a few times with a fork. Microwave for 7-12 minutes until fork-tender.
  3. Gently transfer the potatoes to the prepared skillet and smash them to expose some flesh.
  4. Drizzle olive oil over the smashed potatoes, and sprinkle with salt, pepper, garlic, rosemary, and lemon wedges.
  5. Roast in the oven for about 10 minutes until the edges are golden.
  6. Remove from the oven and add feta, red onion, and capers (or olives) on top.
  7. Roast for another 5 minutes, then squeeze fresh lemon juice over before serving.
