  • 1 lb ground meat (beef, pork, or veal)
  • 2 tbsp olive oil for sautéing
  • 1 onion, finely chopped
  • 1 carrot, grated or finely diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 0.5 cup dry white wine
  • 1 cup milk or heavy cream
  • 1 pinch nutmeg
  • to taste salt
  • to taste pepper
  • 0.5 cup Parmesan cheese, freshly grated for finishing

Method
 

White Bolognese Sauce Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 finely chopped onion, 1 grated carrot, and 1 diced celery stalk. Sauté for 5-7 minutes until softened.
  2. Add 1 pound of ground meat to the skillet, breaking it up as it cooks. Stir frequently for about 8-10 minutes until browned.
  3. Pour in ½ cup of dry white wine and scrape the bottom to deglaze. Simmer for 3-5 minutes until most of the liquid evaporates.
  4. Reduce heat to low, stir in 1 cup of milk or heavy cream, and add a pinch of nutmeg. Simmer for 30-45 minutes until thickened.
  5. Fold in ½ cup of freshly grated Parmesan cheese until melted. Adjust seasoning if necessary.
  6. Serve the sauce over your favorite pasta for a comforting meal.
