  • 2 large Red Bell Peppers substitute with jarred roasted peppers if desired
  • 1 tablespoon Olive Oil can use avocado oil or butter
  • 1 medium Onion shallots can be used for a milder flavor
  • 2 cloves Garlic can replace with garlic powder
  • 1 cup Fat-Free Half & Half substitute with heavy cream or almond milk if dairy-free
  • 4 ounces Garlic & Herb Goat Cheese plain cream cheese or ricotta can be used
  • 1/2 cup Parmesan Cheese nutritional yeast is a great vegan alternative
  • 1 can Artichoke Hearts optional
  • 8 ounces Linguine any pasta shape can be used
  • to taste Salt & Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F (260°C). Roast whole red bell peppers on a baking sheet for 20-30 minutes until charred.
  2. Heat olive oil in a large skillet, sauté onions and garlic until translucent, about 7 minutes.
  3. Lower heat, stir in half & half and goat cheese, cook until cheese melts and mixture is creamy.
  4. Peel and chop roasted peppers, add to the sauce with parmesan cheese and stir until melted.
  5. Blend sauce until smooth using an immersion blender.
  6. Cook linguine according to package instructions. Drain and toss with the sauce.
  7. Season with salt and pepper to taste, serve hot, garnished with extra parmesan and fresh parsley.
