- Preheat your oven to 500°F (260°C). Roast whole red bell peppers on a baking sheet for 20-30 minutes until charred.
- Heat olive oil in a large skillet, sauté onions and garlic until translucent, about 7 minutes.
- Lower heat, stir in half & half and goat cheese, cook until cheese melts and mixture is creamy.
- Peel and chop roasted peppers, add to the sauce with parmesan cheese and stir until melted.
- Blend sauce until smooth using an immersion blender.
- Cook linguine according to package instructions. Drain and toss with the sauce.
- Season with salt and pepper to taste, serve hot, garnished with extra parmesan and fresh parsley.
