  • 1 cup Almond Milk substitute with unsweetened coconut milk if desired
  • 1/4 cup Peanut Butter (no added sugar) or almond butter
  • 1/4 cup Powdered Peanut Butter regular peanut butter can be used if preferred
  • 2 tablespoons Swerve Sweetener or other low-carb sweeteners
  • 1/4 cup Chia Seeds provides gel-like texture
For the Jelly Topping
  • 1/2 cup Blackberries can substitute with low-carb strawberries or blueberries
  • 1/2 cup Raspberries alternatively, use strawberries
  • 2 tablespoons Swerve Sweetener
  • splash water

Method
 

Pudding Preparation
  1. In a large mixing bowl, whisk together almond milk, peanut butter, powdered peanut butter, and Swerve sweetener until smooth.

  3. Divide the mixture into jars or cups, cover, and refrigerate for 1-2 hours.
  4. Stir the pudding gently after 1 hour to break any clumps.
Jelly Preparation
  1. In a saucepan, combine blackberries, raspberries, Swerve sweetener, and water. Cook over medium heat for 5-7 minutes until berry mixture thickens.
  2. Remove from heat and let cool before topping the pudding.
Serving
  1. Spoon the cooled jelly over the chilled chia pudding and enjoy your Keto Delight!
